How To Cook Mini Eclairs With Butter Cream, Chocolate Glaze And Walnuts - Recipe

Required products :

2/3 teaspoon water
300 grams butter (100 grams for the dough and 200 grams for cream)
1 teaspoon wheat flour
4 eggs
200 grams condensed milk
2 tablespoons cocoa powder - optional
pinch of salt
crushed walnuts for sprinkling

 

For the glaze:

100 grams of chocolate (or 3 tablespoons of cocoa + 2 tablespoons of sugar)
50 grams of butter
2 tablespoons of sour cream (or the same amount of milk)


Method of preparation :

Pour the water into a suitable container and place on the stove. Add 100 grams of butter and add a pinch of salt. Bring the mixture to a boil and wait until the butter is completely melted.

 

Then add the flour and mix quickly until smooth.

 

There should be no lumps in the dough. Allow it to cool slightly.

Then beat the eggs and mix thoroughly until thickened. If you use a mixer, at the beginning of the beating the dough will be liquid, gradually thickening.

 

Using a pastry syringe, form round eclairs about 5 cm in diameter, which you arrange directly in a tray covered with parchment.

 

Bake them in a preheated 180 degree oven for about 25-30 minutes. It is important not to open the oven during this time.

 

While the finished eclairs are cooling, make a cream.

Beat the remaining butter (at room temperature), add the condensed milk and continue beating for another 10-15 minutes.

 
If you are going to use cocoa, pour it into this mixture. An option is to divide the cream into two parts, making only one of them cocoa.

 

Roast and grind the walnuts, but do not turn them into too fine crumbs.

 

Fill the eclairs with the finished cream again using the syringe.

 

Coat their surface with the milk-butter combination and sprinkle with walnuts.

 

You can make a glaze by mixing the products listed for it, which you then boil until a homogeneous mass.
