Required products :

For muffins :

  • 1 egg
  • 5 tablespoons / 75 grams / softened butter
  • 1/3 tea cup sugar
  • 1/3 tea cup brown sugar
  • 3/4 cup buttermilk
  • 1 2/3 tea cups flour
  • 2 teaspoons cinnamon
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract

For rolling :

  • 3 1/2 tablespoons / 50 grams / melted butter
  • 1/3 tea cup powdered sugar
  • 1 teaspoon cinnamon powder

Method of preparation :

  • Preheat the oven to 180 degrees and grease with mini muffin tin / with 24 nests /.
  • In a bowl, beat the eggs with the sugar, butter and vanilla extract for 3 minutes.
  • Add the buttermilk and stir briefly.
  • In another bowl, sift the flour, baking powder and cinnamon.
  • Gradually add the dry ingredients to the egg mixture and stir with a wooden spoon without overdoing it.
  • Spread the dough in the prepared muffin tin, filling about 3/4 of each nest.
  • Bake for 10-15 minutes, depending on the size of the form.
  • Allow the muffins to cool for 10 minutes before removing and arrange on a wire rack to cool completely.
  • Melt the butter and transfer it to a shallow dish.
  • In another shallow dish, mix the powdered sugar with the cinnamon.
  • When the muffins have cooled, roll them in melted butter and then in cinnamon sugar.
  • Serve immediately or store in an airtight container for up to 3 days.
