How To Cook Mini Patties With Ricotta, Spinach And Pine Nuts - Recipe

Required products :

  • 1 teaspoon olive oil + more to spread
  • 1/2 small onion, finely chopped
  • 1/2 cup baby spinach, finely chopped
  • 2/3 cup ricotta tea
  • 2 teaspoons cedar nuts, roasted and crushed
  • 1 tablespoon grated Parmesan cheese
  • 6 pastry crusts

Method of preparation :

Fry the onion in olive oil for about 3 minutes. Add the spinach. Once it softens, transfer the mixture to a bowl and allow to cool completely for 30 minutes.

Turn on the oven to preheat to 180 degrees.

Grease a large pan with olive oil.

Add ricotta (or cottage cheese), cedar nuts and parmesan to the spinach.

Take 1 pie crust and lightly grease it, and place a second sheet on top. Cut crosswise to get 4 rectangles.

Put 1 tablespoon of the stuffing in each and roll along the long side, folding the edges.

Arrange in a pan and spread with olive oil. Bake the patties for 15-20 minutes until golden and crispy.
