  • 2 tea cups cooked chicken - shredded
  • 1/2 tea cup mix of cooked peppers (hot or not, optional)
  • 1/2 cup stewed onion
  • 3 tablespoons spice fajita
  • 1 teaspoon cream cheese
  • 1 1/2 teaspoons grated cheddar cheese
  • 1 teaspoon melted butter
  • 5-6 large tortillas
  • parsley for serving

Method of preparation :

Cut with a ring 4-5 circles in each tortilla to get 30 pieces.

 

Mix the melted butter with 1 1/2 tablespoons of the fajita spice . Dip the tortilla circles into the mixture, fold in half and place between the cups of the inverted muffin tin.

 

Bake for 5-6 minutes at 200 degrees until lightly browned. Allow to cool in the mold.

In a bowl, mix the chicken, peppers, onions, the remaining fajita spice, cream cheese and 3/4 cup of cheddar cheese.

 

Fill the tortilla with the resulting mixture.

 

Arrange tightly in a pan and sprinkle with the remaining cheddar. Bake for another 5-6 minutes until the cheddar is melted.

Sprinkle with parsley and serve.
