How To Cook Mint Cream Cheesecake With Chocolate Glaze - Recipe

Required products :

12 round chocolate cookies
375 milliliters of liquid high-fat cream (30%)
20 grams of fresh mint
12 grams of gelatin
60 milliliters of cold water
250 grams of cream cheese at room temperature
170 grams of powdered sugar
80 milliliters of mint liqueur or syrup
green food coloring


For decoration:

150 grams of milk or dark chocolate, broken into pieces
2 teaspoons oil
link fresh mint

 

Method of preparation :

Put paper capsules in muffin tins and place a round chocolate chip cookie on each bottom (you can use double, glued with cream).

Heat the cream (without boiling) in a small saucepan on the hob or using the microwave. Add the mint leaves to it and leave to cool completely.
Cover the dish with plastic wrap and put it in the refrigerator for 4 hours to absorb the aroma and taste of the plant. Then remove the leaves.

Pour gelatin in cold water. When it swells, dissolve in a water bath and should cool.

Beat the cream cheese with the sugar in a blender until smooth. Then add the cream and beat until thickened. Without interrupting the process, pour the mint liqueur or syrup and put green food coloring for more saturated colors on the cupcakes. Last put gelatin.

Fill the tins with the resulting "dough" and level the surface.

Put the cupcakes in the refrigerator for at least 4 hours.

Shortly before serving, prepare the glaze by mixing the broken chocolate pieces with the butter in a bowl and melting them in a microwave or water bath.

Stir until you get a smooth cream, which you apply on each cupcake.

Garnish with fresh mint leaves.
