Required products :

  • 40 grams of fresh mint leaves
  • 150 milliliters of liquid high-fat cream (35%)
  • 3 eggs
  • 100 grams of dark chocolate
  • 140 grams of sugar
  • 1 tablespoon mint liqueur
  • 1/2 teaspoon lemon juice
  • sea ​​salt

 

Method of preparation :

Separate 6-8 mint leaves for decoration, and the rest cut into large pieces or just chop with your hands. Put them in a pan, pour 120 milliliters of cream.

When it boils (over medium heat), remove from the heat, close the pan tightly with a lid and leave for an hour at room temperature.

Then strain the cream. Pass the mint through a sieve, mix the two ingredients again and strain a second time.

Put the aromatic liquid in the refrigerator for 15-20 minutes and then beat until you get a stable foam, which is left to cool.

Using a wire whisk, beat the three yolks in a water bath along with 60 grams of sugar and a pinch of salt. It takes about 5-7 minutes to get a uniform smooth consistency.

Mix the egg whites with the remaining sugar, lemon juice and a pinch of salt. Whisk on a steam bath for 3-4 minutes until the sweet crystals are completely dissolved. Then remove the pan from the heat and beat with a mixer until it becomes a stiff foam.

Combine the yolks and whites, stirring thoroughly with a silicone spatula, add the cream. To enhance the green color, you can 1-2 a few drops of food coloring.

Transfer the mixture prepared in this way to a suitable container and place it in the freezer for at least 3 hours.

Ten minutes before serving the dessert, break the chocolate into small pieces and melt them in a water bath.

Pour the remaining cream, mint liqueur and mix thoroughly.

Remove the bowl from the heat, let its contents cool a bit and then pour the dessert with it.

Garnish with the reserved mint leaves, which you can dip in the chocolate glaze and use to decorate the dessert when the coating is firm.
