Boil the lemon with boiling water, then grate its peel and squeeze its juice.
Break the chocolate into small pieces and melt in a water bath.
Divide the eggs into whites and yolks. Beat the egg whites.
Mix the butter with the sugar, add the vanilla sugar, egg yolks, lemon zest and juice. Mix the ingredients well, then add the cottage cheese, semolina, pudding powder and whipped egg whites to the mixture. Separate 1/3 of the resulting combination and pour in the chocolate, cocoa and coffee. Mix thoroughly.
Pour the dark combination into a greased detachable baking dish, leaving 4 tablespoons of the mixture for decoration.
Spread the light mass on this layer.
Put the selected amount for decoration in a pastry syringe (or use a plastic bag whose corner you cut) and apply on the white surface. Then, using a fork, spread the mixture so as to obtain an original decoration.
Place the dessert in the oven for 30-35 minutes at 220 degrees, then reduce the temperature to 180 and bake for another 35-40 minutes. At the end of the process, cover the cheesecake with aluminum foil so that it does not burn on top.
Refrigerate for 3-4 hours before serving. You can arrange with a ball of ice cream and mint leaves.
