Necessary products:

 

  • 125 grams of flour
  • 2/3 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 125 grams of sugar
  • juice and peel of 1 lime
  • 140 grams of soft butter
  • 2 eggs
  • 1 tablespoon mint milk

 

for cream

 

  • 150 grams of butter
  • 250 grams of powdered sugar
  • 2 teaspoons dark rum
  • 1 tablespoon mint milk
  • mint leaves for decoration

 

Method of preparation:

 

In a bowl, mix the flour with the two leavening agents, sugar, peels and lime juice, butter, eggs and mint milk. Stir until smooth and pour the mixture into paper-lined muffin tins.

Preheat the oven to 180 degrees and bake the cupcakes for 30-40 minutes. Meanwhile, prepare the cream. Beat the butter with the powdered sugar and add the rum and mint milk.

 

Stir and put the cream in a syringe. Cool. When ready, take out the muffins, wait for them to cool and decorate them with a syringe. Decorate with fresh mint leaves and serve.
