Required products :

1 liter of fresh milk

50 grams of parmesan

50 grams of emmental

3 tablespoons flour

4 tablespoons butter

grated nutmeg on the tip of a knife

salt to taste

 

Method of preparation :

Melt the butter in a suitable pan, add the flour and fry over low heat, stirring occasionally, until golden brown (about 3 minutes).

Then gradually pour in the milk and mix vigorously with a wire whisk so that no lumps form.

When the mixture boils, season with salt to taste and nutmeg. Allow the sauce to cook for 5-7 minutes or until thickened. Don't forget to stir.

Grate the cheeses finely and gradually add them to the milk mixture after removing it from the heat.

Stir until the cheeses are completely melted.

The appetizing sauce is ready. It is served warm and is a suitable addition to roasted aubergines, all kinds of vegetable dishes, pasta with yellow cheese and ham as well.
