Required products :

  • 2 oranges, well washed
  • whole cardamom seeds, crushed
  • 225 grams of xylitol (sweetener)
  • 6 large eggs
  • 200 grams of ground almonds (almond flour)
  • 50 grams of cornmeal
  • 25 grams of self-swelling flour
  • 2 teaspoons baking powder
  • sliced ​​almonds for sprinkling
  • Greek milk or cream for serving

Method of preparation :

Put the whole oranges in a saucepan and pour water over them, cook them for 1 hour until soft (if the oranges float above the water, stir them with a fireproof bowl).

Remove the cooked oranges from the water and allow to cool.

Cut the oranges into quarters and peel them and the seeds, then grind the fruit.

Preheat the oven to 160 degrees and line a form with a falling bottom with baking paper.

Beat the eggs with the cardamom, sweetener and orange puree. Add ground almonds, cornmeal, flour and baking powder. Once the products are well combined, pour into the pan and bake for 40 minutes.

After 40 minutes, open the oven and quickly spread the sliced ​​almonds on the cake, then bake for another 20 minutes, until dry.

Remove from the pan and allow the cake to cool completely before serving.
