We present you a quick and easy winter salad with carrots and oranges. The sweet taste of carrots is perfectly complemented by the citrus aroma of oranges and lemons.

Required products :

  • handful of raisins (dark)
  • peel and juice of 1 orange
  • 500 grams of carrots
  • 1/2 teaspoon ground cumin and coriander
  • 2 pinches of cinnamon
  • 1-2 teaspoons white wine vinegar
  • a handful of mint leaves, finely chopped
  • salt and pepper
  • juice of half a lemon (optional)

Method of preparation :

Soak the raisins in the orange juice for 10-15 minutes.

Grate the carrots and put them in a bowl. Add to them the grated lemon peel, raisins and orange juice, spices and vinegar.

Stir well.

Finally add the mint, season to taste with salt and pepper.

If desired, you can add more lemon juice. Be sure to refrigerate before serving.
