Necessary products:

  • 1 egg
  • 25 grams of flour

  • 250 grams of prune puree
  • 2 teaspoons lemon juice
  • 8 grams of gelatin
  • 175 grams of protein cream
  • 250 grams of whipped cream

  • 150 grams of white chocolate
  • 60 grams of crushed pistachios

 

Method of preparation:

 

In a bowl, mix the flour, egg, sugar and vanilla. Stir and cover the bottom of the cake tin with the mixture. Preheat oven to 200 degrees and bake for 10-12 minutes. Cool and place a medium-sized ring on the baked sheet.

In another bowl, put the sour cream, sugar, mascarpone and protein. Beat the mixture until homogeneous and add pre-dissolved gelatin. Distribute the milk mixture in the form and freeze for an hour. Meanwhile, prepare the plum mousse.

To do this, put the puree in a bowl, add lemon juice, whipped cream and cream. Beat until smooth and add the gelatin prepared in the same way. Remove the cake, using a larger form, distribute the resulting mousse and cool for two hours.

Melt the chocolate in a water bath, spread it on a sheet of parchment and smooth. While still soft, sprinkle with crushed pistachios and wait for it to set. Break into equal parts and decorate the cake with them. Cut, serve and enjoy its delicate taste.
