How To Cook Muffins With Carrots, Zucchini And Cinnamon - Recipe

Required products :

Wet mixture :

  • 1 teaspoon grated carrots / about 2 medium-sized carrots /
  • 1 tea cup grated zucchini / about 1 small zucchini /
  • 1 cup sweet mashed potatoes
  • 2 eggs
  • 1/2 teaspoon sugar
  • 1/2 teaspoon brown sugar
  • 1/2 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange or lemon peel

Dry mix :

  • 1 1/2 teaspoons flour
  • 1/4 cup coconut shavings, unsweetened
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup roasted pumpkin seeds
  • 2 tablespoons flaxseed

Method of preparation :

 

Preheat the oven to 180 degrees and grease a standard muffin tin / with 12 slots /.

In a large bowl, mix the wet ingredients and mix well.

In a medium bowl, combine the dry ingredients.

Gradually add the dry to the wet ingredients and stir with a wooden spoon without overdoing it.

Spread the mixture in the muffin tin and bake for about 15-18 minutes.

Wait for them to cool briefly before removing them and placing them in paper cups.

Serve with a smile.
