How To Cook Muffins With Cauliflower, Bacon And Cream Cheese - Recipe

Replace ordinary muffins with those made from cauliflower and almond flour. If you want to completely avoid the use of wheat products instead of breadcrumbs, you can also use almond flour. Here's what we're talking about:

Required products :

  • 50 grams of melted butter
  • 1/2 cup panko breadcrumbs
  • 500 grams of cauliflower, cut into rosettes
  • 1 broken egg
  • 250 grams of cream cheese
  • 1 1/4 tea cups almond flour
  • 3/4 tea cup grated yellow cheese of your choice
  • 2 thin slices of bacon, finely chopped
  • 1 teaspoon fresh thyme

Method of preparation :

Preheat the oven to 200 degrees with the fan on.

Spread 12 tablespoons of the melted butter on half of the melted butter. Sprinkle a little breadcrumbs on each mold and tilt in all directions to stick the grains to the bottom and walls. Discard excess.

Save half a cup of the cauliflower roses and grind the rest in a food processor to turn into small crumbs. Transfer to a bowl, add the eggs, cream cheese, almond flour and 1/2 cup yellow cheese. Season with salt and pepper and distribute the mixture in the tins.

Thinly slice the separated cauliflower roses, mix them with the finely chopped bacon, thyme and the remaining yellow cheese. Sprinkle this muffin with this mixture and lightly grease with butter.

Bake for 20-25 minutes until the cauliflower muffins turn golden brown.
