Required products :

  • 12 eggs medium in size
  • 200 grams of raw turkey or pork sausage - removed from the skin
  • 2 teaspoons wholemeal flour
  • 1 teaspoon self-swelling white flour
  • 1 tablespoon baking powder
  • 1 teaspoon sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon black pepper
  • 2 cups buttermilk
  • 3 tablespoons canola oil
  • 3 large eggs
  • 1 cup grated cheddar cheese

 

Method of preparation :

Grease a 12-well muffin tin with grease of your choice or use cooking spray. Preheat oven to 200 degrees.

Bring salted water to a boil in a saucepan. Carefully place the 12 eggs and cook for 5 minutes. Transfer them to ice-cold water and peel them after 10 minutes.

Fry the meat from the sausage until browned. Transfer to drain excess fat on paper.

In a bowl, mix the two types of flour, sugar, baking powder, baking soda and pepper. Separately in another bowl mix the buttermilk, oil, 3 large eggs. Add the dry to the wet ingredients and mix with a spatula. Add 2/3 of the sausage and 1/2 of the cheddar cheese to the dough.

Fill half of each mold with the mixture and put 1 boiled egg. Cover with batter and sprinkle each muffin with the set aside sausage and egg.

Bake for 17 minutes, allow the muffins to cool in the tin for 10 minutes and then carefully remove the cupcakes with a spatula.
