Muhamara is a sauce that can be prepared with hot, sweet or smoked paprika. The sauce originates from Syria. A main product in Middle Eastern cooking - pomegranate molasses (dark red syrup made from tart pomegranate juice) adds the right amount of sweetness and acidity to this healthy recipe. Turn this easy sauce into a delicious appetizer or dinner by adding a few grilled aubergines and crackers. Serve with sparkling wine for your holiday.

Necessary products:

  • 3 sweet red peppers
  • 2 onions
  • 1/2 cup breadcrumbs or bread crumbs (you can use crushed rusks)
  • 3/4 tea cup walnuts
  • 2-3 cloves of garlic
  • 5-7 tablespoons olive oil
  • 1 teaspoon dry ground chili pepper or 2 fresh
  • juice of 1/2 lemon (or rice vinegar)
  • 2-3 tablespoons of fruit syrup (for example, from pomegranate, or you may not use syrup)
  • 1 tablespoon sugar
  • 1 teaspoon salt (or to taste)

Method of preparation:

Clean the peppers from the seeds, tails and put them in the oven at 180 degrees for 10-15 minutes. Finely chop the onion and garlic and fry them in hot olive oil over medium heat until golden. If you want to keep the aroma of garlic, you may not fry it. Peel the prepared peppers. Mix all products (except fat and onion) and mash. If you haven't fried the garlic with the onion, add it now.

After mashing, add the fried onions (and garlic) along with olive oil, you will get a mash. Beat once more. The sauce is ready.

You can serve with mozzarella cheese and sprinkle with parsley. Serve with slices of cucumber, grilled eggplant, olives, whole grain crackers, slices of carrot or other as desired.

In addition to mozzarella, Muhamara sauce is suitable for adding to plain porridges and spaghetti. It can also be used to season soups or as a marinade for meat and fish. It all depends on your imagination.
