How To Cook Mushroom Curry With Rice - Recipe

Required products :

  • 2 tablespoons olive oil
  • 500 grams of mushrooms (mix of different types - mushrooms, portobello, brown), cut in bulk
  • 2 cloves garlic, cut into thin slices
  • 5 cm ginger root, grated
  • 1 onion, thinly sliced
  • 1 long hot red pepper, thinly sliced
  • 1 teaspoon turmeric
  • 1 teaspoon fenugreek
  • 1 teaspoon mustard seeds
  • 1 1/2 tea curry powder
  • 500 grams of soft tomatoes, chopped, or 1 can of 400 grams
  • 1 tablespoon mango chutney
  • 400 milliliters of coconut milk
  • 200 grams of high quality white cheese
  • cooked rice - white, brown or basmati
  • coriander and lime for serving

Method of preparation :

Turn the oven to 200 degrees to preheat.

In a small pan pour olive oil and place to heat on the stove. Add the mushrooms and fry until soft and slightly golden - 5-8 minutes. Followed by garlic, ginger, onion, hot pepper and spices. Stir for 2 minutes until the aromas are relaxed.

Add the tomatoes, mango chutney and coconut milk. Stir and season with salt and pepper. Bring the mixture to a boil, then sprinkle with the cheese.

Transfer to the oven and bake for 30 minutes until the pieces of cheese turn golden and the curry sauce thickens.

Serve on a bed of boiled rice, sprinkle with coriander and serve with slices of lime.
