Method of preparation :
Wash the mushrooms and cut into pieces.
Peel an onion, cut it into large pieces.
Pour boiling water over the tomatoes and after 5 minutes peel their skins and cut the flesh into cubes.
Melt the butter in a pan when it is hot enough, pour the mushrooms in it and fry them for about 10 minutes.
Add the onion and let the mixture remain on the hob until the onion turns golden.
Then add the flour and mix everything.
Two or three minutes later, add the tomatoes, stir again and let the products simmer on low heat, stirring, so as not to burn.
Once the sauce thickens as much as you want, remove the dish from the heat, season with salt and pepper, sprinkle with parsley and serve warm.
