How To Cook Mushroom Oil With Garlic, Cognac And Onion - Recipe

Required products :

50 grams of dried white mushrooms
2 heads of old onions
50 grams of melted butter
1 sprig of parsley
2 sprigs of fresh thyme
1 tablespoon of cognac
200 grams of butter
3 pinches of ground black pepper a
pinch of sea salt
1 clove of garlic

 

Method of preparation :

Pour warm water over the mushrooms and leave for 15 minutes. Then transfer to a saucepan and put one peeled onion. Pour enough water to cover the products. Place the pan on the stove and let it cook over low heat.

Peel the other onion and cut it into small cubes, which you stew until soft in a greased pan. Add the finely chopped garlic clove and fry at minimum temperature.

Drain the liquid from the prepared mushrooms using a colander and let cool slightly. When this happens, cut them randomly and add to the onion. Fry for a few minutes, then pour the cognac. Let everything cook for another 1-2 minutes on low heat and remove the pan from the heat. Then season with salt and ground black pepper, stir and transfer to a plate to cool. Then pour them into a small bowl and put the thyme. Next, soften the oil at room temperature and stir vigorously. A homogeneous mixture must be obtained.

Taste and season further if desired.

Spread the mushroom oil on a sheet of plastic wrap, sprinkle with sea salt and wrap, forming a "sausage". Refrigerate to firm.

You can now smear a slice with it and eat.
