Required products :

  • 20 grams of dried mushrooms
  • 1/2 tablespoon olive oil
  • 2 onions, finely chopped
  • 1 clove of garlic, crushed
  • 175 grams of wild mushrooms, finely chopped
  • 175 grams of wigs, finely chopped
  • 1 tablespoon finely chopped thyme
  • 60 milliliters of Porto wine
  • bread or crackers to serve

Method of preparation :

Soak the mushrooms in 150 milliliters of boiling water and leave them for 30 minutes, strain and save the liquid. Cut the mushrooms very finely.

Fry the onion for 5 minutes until soft, add the garlic, and after a minute all the raw peppers and thyme. Stew for 10 minutes until the liquid is reduced and the mushrooms are browned.

Add the chopped mushrooms and the wine, cook until the liquid boils. Add the liquid from the soaked mushrooms and mix well, scraping off any residue on the bottom of the pan. Bring to the boil until the liquid has almost completely evaporated. Season and cool.

Blend the mixture until a paste is obtained. Garnish with a little thyme and serve the pate with bread or crackers.

You can store in the refrigerator for up to 1 week.
