Necessary products:

2/3 tsp white rice (Arborio)

1 onion

2 cloves garlic

4 tsp broth (chicken or vegetables)

200 g mushrooms (duck leg)

1 tsp oregano

a little nutmeg

salt and pepper to taste

1 tbsp lemon juice

2 tablespoons grated yellow cheese

olive oil

Method of preparation:

Heat the broth almost to a boil and keep it hot on low heat.

Cut onions and garlic and fry them for 2 minutes in olive oil. Then add the rice and let it cook for a few minutes, stirring. Gradually pour in the hot broth, stirring and pouring in when the amount you have previously added is completely absorbed by the rice. In parallel, heat the olive oil in a separate bowl and fry the mushrooms briefly (2-3 minutes), adding oregano and nutmeg. Mix them with the rice, 10 minutes before it is completely ready. Forge. Add the lemon juice for 2 minutes before removing from the heat. Remove the finished risotto from the heat, add the grated yellow cheese, stir and serve immediately.

You can use more lemon juice and / or add lemon peel. Also, if desired, add wine at the beginning of frying before pouring the broth.
