How To Cook Mushroom Risotto With Lentils, Onions And Cheese - Recipe

Required products :

  • 2 tablespoons olive oil
  • 1 large head of yellow onion, finely chopped
  • 450 grams of mushrooms, cut into quarters
  • left cashier
  • freshly ground black pepper
  • 1 cup fresh milk
  • 2 large eggs, lightly beaten
  • 1 teaspoon + 2 tablespoons grated cheese
  • 4 tea cups boiled rice, white or brown
  • 2 1/2 teaspoons boiled lentils
  • 1/2 cup fresh parsley, finely chopped

Method of preparation :

 

  • Preheat the oven to 180 degrees and grease a rectangular pan measuring 23 x 33 cm with olive oil.
  • Heat 2 tablespoons olive oil in a large skillet over medium heat.
  • Add the onion and caramelize it for 8-10 minutes, stirring often.
  • Increase the heat to medium and add the mushrooms.
  • Season with salt and pepper and cook for another 4-5 minutes. Remove from the heat.
  • In a large bowl, mix the milk and 1 teaspoon of grated cheese.
  • Add the cooked rice, lentils, mushroom mixture and parsley.
  • Season with salt and pepper to taste and mix well.
  • Pour the mixture into the prepared pan and sprinkle it evenly with the remaining yellow cheese.
  • Cover with aluminum foil and bake for 15 minutes.
  • Remove the foil and bake the mushroom risotto for another 10-15 minutes.
  • Serve immediately to enjoy the irresistible taste and aroma.
