Serve the vegan mushroom sauce with cauliflower steaks, mashed potatoes or vegetables, with fried tofu or, if you are not a vegetarian or vegan, with roasted turkey or chicken.

Required products :

  • 3 tablespoons extra virgin olive oil
  • 230 grams of mixed mushrooms
  • 1/4 teaspoon black pepper
  • pinch of sea salt
  • 1 large onion, chopped
  • 1/4 tea cup dry sherry wine
  • 2 tablespoons flour
  • 2 teaspoons mushroom broth
  • 1 teaspoon fresh thyme, chopped

Method of preparation :

Heat olive oil in a large pan with a non-stick coating over high heat. Fry the mushrooms, seasoning them with pepper and salt. When they turn golden brown on one side (after about 3 minutes), stir and continue cooking until they have released most of their liquid.

Pour the chopped onion and stir for 1 minute. Reduce heat, pour dry sherry wine and cook, stirring, until wine evaporates. Sprinkle the mushrooms with the flour and stir again.

Pour the mushroom broth and bring to a boil, stirring often, until the sauce thickens. Add the thyme, stir and serve.
