Necessary products:

  • 2 tablespoons olive oil
  • 1 small onion (or 12 green onions)
  • 2 cloves garlic
  • 300 grams of mushrooms
  • 1 kale
  • 1/2 tablespoon dried thyme
  • 1/2 tablespoon dried basil
  • 1/2 tablespoon dried parsley
  • 1/4 tablespoon black pepper
  • 1 tablespoon tomato paste
  • balsamic vinegar for sprinkling
  • 8 teaspoons vegetable broth
  • 1/2 teaspoon quinoa
  • salt to taste
  • lemon juice (if desired)

Method of preparation:

Put a large saucepan on the hob that you have turned on to medium. Add the fat and sauté the onions for 3 minutes. When it becomes transparent, add the crushed garlic and fry briefly to release its aroma.

Add the chopped mushrooms and cook until the water evaporates, about 5 minutes. Season with thyme, basil, parsley, black pepper and tomato paste. Stir. Put the chopped kale and mix well all the products in the pan.

Pour the broth and a little balsamic vinegar. Stew for 10-15 minutes and add the quinoa. After another 15 minutes, your meal is ready. Add salt to taste and squeeze lemon juice if desired.

You can easily replace the curly cabbage in the recipe with another suitable green leafy vegetable - spinach, dock, and why not with nettle.
