Required products :

  • 3 eggs
  • 100 grams of yellow cheese (hard)
  • 150 grams of ham
  • 10-15 cherry tomatoes
  • 1-2 cucumbers
  • 30 grams of fresh parsley to serve
  • 2-3 tablespoons of mayonnaise

To make homemade garlic mayonnaise:

  • 1 egg yolk
  • 1 clove garlic
  • 1 teaspoon mustard
  • juice of 1/4 lemon or to taste
  • 150-200 milliliters of oil
  • salt and pepper to taste


Method of preparation :

First make the garlic mayonnaise. Separate the yolks from the whites. Put the yolks in a deep bowl and start adding the oil in drops. Meanwhile, beat continuously (use a wire whisk) until the mixture thickens. To speed up the process, you can bet on a blender.

The mixture should become so thick that traces of the wire stirrer remain on its surface. Then add the mustard, chopped garlic clove, lemon juice, salt and ground black pepper to taste.

Boil the eggs hard (8 minutes), peel them and grate them finely together with the yellow cheese.

Cut the ham into small pieces and mix it with the eggs and yellow cheese. Season with salt and pepper, add a little mayonnaise and stir. A thick mass must be obtained which retains its shape. Divide it into 20-30 small portions and form balls with wet hands.

Cut the cherry tomatoes in half, the cucumbers into circles about a centimeter thick.

Cover the bottom of a plate or tray with lettuce leaves. Put the cucumber rings on them.

Give a light conical shape to the balls, which you place on each vegetable base - so the legs of the mushrooms are ready.

You probably already know that the hats will be tomato. Put half a cherry tomato on the egg mass and with a thin brush or other handy tool / utensil make dots of mayonnaise on the hats.

 

Serve the dish no later than half an hour after cooking, because then fresh vegetables will lose their freshness.
