How To Cook Mussel Casserole With Mushrooms, Tomatoes And Yellow Cheese - Recipe

Required products :

  • 200 grams of frozen mussels (cleaned and pre-cooked, meat only)
  • 150 grams of mushrooms
  • 1 onion
  • 2 cloves garlic
  • 2 tomatoes (choose fleshy)
  • 2 sweet green peppers
  • 120 grams of yellow cheese (or cheddar cheese)
  • 3 tablespoons vegetable oil
  • 50 grams of butter
  • 4 sprigs of parsley
  • 8 olives (4 green and 4 black)
  • 1 tablespoon pickled capers
  • black and red pepper, salt


Method of preparation :

Defrost the mussels.

Make cross-cuts in the top of the tomatoes and immerse in boiling water for a minute. Immediately afterwards, cover with cold and peel their skins. Cut the meat into small cubes.

Peel an onion and cut it into semicircles, peppers and mushrooms into medium pieces, and finely chop the garlic.

Heat the oil in a large pan, add the butter. When it melts, pour the onion into the pan and fry.

Next are the mushrooms (stir while cooking), and three minutes later add the garlic and peppers.

After 5 minutes, pour the mussels and tomatoes over the other products in the pan. Let everything cook for 5-6 minutes (until the tomatoes soften). Season with red and black pepper, add salt.

Divide the mixture into four pots, sprinkle with chopped parsley, put a piece of butter in each bowl, and cover the top with a layer of cheese, which must first grate.

Bake in the oven until golden (about 20-30 minutes).
