Required products :

  • 3 tablespoons extra virgin olive oil
  • 1 onion, chopped
  • 1 cup celery, chopped
  • 1/2 cup flour
  • 1/2 teaspoon dried thyme
  • salt and pepper to taste
  • 1 bay leaf
  • 1 cup whole milk
  • 3 cups potatoes, chopped
  • 1 can of mussels + their liquid, cut (about 450 grams)
  • crispy bacon for garnish
  • green onions for garnish

* A tea cup is used to measure the quantities.

Method of preparation :

Heat olive oil in a pan and fry onions and celery until soft and lightly browned. Sprinkle the vegetables with flour, thyme, salt, pepper and bay leaf, stir and cook for 1 minute.

Pour the juice from the mussels and milk and bring to a gentle boil, stirring constantly.

Add the potatoes and simmer gently, stirring occasionally, until soft.

Pour the mussels and stir often until cooked through (2-4 minutes).

Serve the soup with crispy bacon and green onions if desired.
