Required products :

  • 2 teaspoons mussels
  • 1/2 cup onion
  • 1 sprig of thyme
  • 1 bay leaf
  • 1 sprig of parsley
  • 1/2 tea glass of dry white wine
  • 3 large tomatoes
  • 1 tablespoon cornmeal mixed with water to a thick paste
  • 1/2 cup sour cream
  • 3 strands of saffron
  • 1/4 tea cup butter
  • 1 tablespoon black pepper
  • chives for garnish

Method of preparation :

Boil the mussels with the onion, thyme, parsley and bay leaf until the mussels open.

Transfer the mussels to a plate and peel them.

Remove the spices and onions from the water.

Cut the tomatoes into cubes and add them to the pan, cook for 10 minutes.

Add the cornflour to the broth and continue to cook for another 2 minutes.

Pour the white wine and cream, after 5-7 minutes add the saffron.

Mix the black pepper with the butter and mussels. Stir and add them to the soup.

Serve the soup sprinkled with chives.
