Required products :

  • 50 grams of butter
  • 1 stalk of leek, thinly sliced
  • 25 grams of flour
  • 330 milliliters of beer
  • 125 grams of grated cheddar
  • 1 1/2 tablespoons Dijon mustard
  • 8 slices of bread with yeast, toasted

for mussels:

  • 2 onions, cut into thin crescents
  • 2 chopped garlic cloves
  • 1 kg mussels (use only closed ones)
  • 1 tablespoon cream
  • parsley

Method of preparation :

Melt half the butter and fry the leeks until soft. Add the flour, and two minutes later pour 125 milliliters of beer, add the cheddar and 1/2 tablespoon of mustard. Season with black pepper.

In another pan, melt the remaining oil and fry the onion in it for 5 minutes until golden. Add the garlic, the remaining beer and cook for 2-3 minutes.

Clean the mussels and pour them into the pan, close with a lid, stew for 4-5 minutes until they open (discard those that are closed).

Transfer the mussels to a serving dish (without the liquid).

Spread the leek mixture on the slices of bread and bake on high heat. Mix the cream with the parsley and the remaining mustard. Pour the resulting mixture over the mussels. Serve with toast.
