Required products :

  • 2 tablespoons butter
  • 1 small leek, thinly sliced
  • 1 small onion, thinly sliced
  • 4 cloves garlic, chopped
  • 2 bay leaves
  • salt and pepper
  • 1 teaspoon white wine
  • 500 grams of midi
  • 2-3 tablespoons homemade mayonnaise + more to serve
  • 1 tablespoon lemon juice
  • 1 teaspoon grated lemon peel
  • 3 tablespoons finely chopped parsley
  • bread with yeast, drizzled with olive oil and toasted

Method of preparation :

Melt 1 tablespoon butter in a large pan, add leeks, onions, garlic and bay leaf. Season with salt and pepper and fry for 10 minutes until the vegetables are soft and browned.

Increase the temperature of the stove and add the wine, wait for it to evaporate in half (for about 2 minutes). Add the mussels, stir and cover with a lid, shaking the pan every 30 seconds. When the mussels open, remove them from the heat.

Pour them into a bowl and put a lid on them to keep them warm.

Mix the remaining butter with the mayonnaise, put in the pan, stir and return the mussels to the pan. Add parsley, lemon juice and zest.

Serve in warm bowls with toast.
