Momo are Nepalese traditional dumplings. If you go to Nepal, you will certainly be able to try them, as they are sold on almost every corner. If you decide to make them at home, know that you do not need to have experience to make them, because they are easy and quick to prepare. You can serve momo with a little soy sauce with hot peppers or green onions with sour cream instead of the traditional Nepalese sauce.

Required products :

for the dough:

  • 100 grams of flour + more for kneading
  • 100-120 milliliters of water

for the filling:

  • 1 tablespoon butter (or vegetable oil)
  • 200 grams of minced chicken (or 2 chicken fillets, chopped)
  • 1/2 head onion, chopped
  • 2 large garlic cloves, chopped
  • 12 grams of peeled ginger, finely grated
  • 60 grams of carrots, finely grated and drained of liquid
  • 1/3 cup coriander, finely chopped
  • 3/4 teaspoon garam masala
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon ground black pepper
  • salt to taste

for the sauce:

  • 1 large red hot pepper
  • 2 large tomatoes
  • 1 tablespoon olive oil
  • 2 cloves garlic, chopped
  • 10-12 grams of ginger, peeled and chopped
  • 1/3 red wine vinegar (or other)
  • a pinch of sugar

Method of preparation :

the dough:

Mix the flour with the water in a bowl and knead until a smooth and soft dough, then cover with a damp cloth and leave it to rise while you make the filling.

the filling:

Mix in a large bowl the butter (or vegetable oil), minced chicken, onion, garlic, ginger, carrots and coriander. Season with garam masala, cumin, pepper and salt to taste. Fry some of the filling, taste and, if necessary, season.

dumplings momo:

Place a large steamer to heat and, once the water has boiled, cover the bottom of the tray with lightly greased baking paper.

Roll out the dough, roll it up and cut it into 20-22 small pieces, which you shape into balls and roll out into very thin circles with a diameter of about 6-7 centimeters.

In the center of each circle put 1 teaspoon of the filling and close, gathering the edges of the dough and press with your fingers or a fork to glue them. Repeat with the remaining dough and filling in the same way, then place the shaped momo dumplings in the steamer, cover and stew for 12-14 minutes or until done.

sauce:

Heat a pan over high heat and cook the tomatoes and hot peppers, turning occasionally until the peppers are slightly browned. Remove from the heat and allow to cool, then peel and finely chop the tomatoes, clean and chop the hot pepper.

Heat olive oil in a small pan over low heat and fry the garlic in it for 30 seconds or until it starts to change color. Add the ginger, sugar, chopped tomatoes, hot pepper and vinegar. Season to taste and stir.

Serve hot sauce with hot momo dumplings.
