Marinated lemons are part of Indian cuisine and are served with almost every dish. You can use both lemons and limes.

Required products :

  • 8 limes (lemon)
  • 1 tablespoon salt
  • 2 tablespoons mustard oil (or plain oil)
  • 2 teaspoons mustard seeds
  • 3 cloves garlic, finely chopped
  • 2 cm finely chopped ginger root
  • 2 teaspoons cumin
  • 2 teaspoons coriander powder
  • 1/2 teaspoon hot red pepper
  • 125 milliliters of water
  • 125 grams of brown sugar
  • 2 tablespoons white vinegar

Method of preparation :

Cut the lemons into 8 pieces each. Put them in a large bowl and sprinkle with salt. Cover and leave in a cool place for 2 days, stirring occasionally.

Put the fat in a saucepan and fry the mustard seeds in it until they start to crack - about 30 seconds. Add garlic, ginger, cumin, coriander and hot pepper. Fry for 30 seconds to release its aroma.

Pour the lemons, water, sugar and vinegar, bring the mixture to a boil. Reduce the temperature to low and cook on low heat for 15 minutes, during which time the liquid should be reduced and thickened.

Distribute it in jars and seal, turn them over and leave to cool. Wait at least 1 week before opening them to saturate the aromas.
