Necessary products:

For caramelized nuts:

  • 40 grams of sugar
  • 80 grams of raw nuts (walnuts, almonds, pistachios or others)

For syrup:

  • 40 grams of sugar
  • 3 tablespoons honey
  • 1/2 cup orange peel jam

For cream:

  • 3 egg whites
  • pinch of salt
  • 300 ml liquid cream (cold)
  • 100 grams of dried fruit (figs, raisins or other)
  • 1 tablespoon vanilla extract or 1 packet of vanilla

Method of preparation:

Preheat the oven to 180 ° C. Spread the walnuts, almonds and / or pistachios on baking paper. Bake for about 5-10 minutes until lightly browned and pleasantly fragrant. Allow the nuts to cool and cut them into large pieces.

Finely chop the dried figs and raisins. Put them in a bowl of warm water while you prepare the cream.

Melt the sugar in a pan over medium heat. Add the nuts and mix well for about 1 minute. Remove from the heat and pour on parchment paper. Allow to cool.

Slowly pour the sugar syrup over the protein mass, beating continuously for about 5 minutes. A thicker consistency should be obtained. Add the vanilla.

Beat the cream with a mixer until fluffy. Cut the caramelized nuts into small pieces. Strain the water from the dried fruits and dry them with kitchen paper.

Pour the cream over the cream and mix with a spatula in light circular motions. Transfer to a convenient ice cream tin and add the caramelized nuts and dried fruit. Stir again gently with a spatula. Garnish on top with nuts if desired. Close the form with a lid or foil and leave in the freezer for a few hours.
