Required products :
2/3 tea cup honey
2 egg whites
1 tea cup roasted almonds
1/2 tea cup chopped dried apricot
peel half a lemon
Method of preparation :
Cover the bottom and walls of a deep pan with a sheet of parchment.
Melt the honey in a water bath, beat the egg whites until "hard peaks". Carefully add the latter to the liquid honey and mix with a wooden spoon until smooth. A caramel-colored mixture will be obtained. Keep stirring until it thickens and acquires a lighter shade. This will take you about 45 minutes.
Then comes the coarsely chopped roasted almonds, dried apricots and grated lemon peel. All this must happen while the vessel is in a water bath. Stir until white. The process is not easy, but the end result is worth it.
Transfer the combination to the prepared form and cover with parchment. Leave for a few hours (preferably overnight) in a dry place.
Once the dessert is firm enough, cut into long pieces with a sharp knife.
The nougat is stored wrapped in parchment and refrigerated.
