Required products :
150 grams of hazelnuts
150 grams of almonds
250 grams of fine sugar
10 milliliters of hazelnut
oil a little butter
Method of preparation :
Preheat oven to 200 degrees.
Cover the bottom of a suitable baking dish with parchment, distribute the
nuts evenly . Bake them for about 8-10 minutes until they acquire a light golden color.
Then transfer them to a deep bowl with a thick bottom, put on the stove (at medium temperature) and add the sugar gradually. Stir during this time so that the nuts are covered with caramel. This will take about 10-15 minutes, the caramel will acquire an amber color.
Coat a sheet of parchment with a little oil and spread an even layer of nuts and caramel. Allow the mixture to cool completely, then break into pieces.
Using a blender or food processor, grind until you get "flour".
Add the hazelnut oil (or other vegetable fat) and beat on high speed. The result is a delicious thick paste known as "Praline", which you put in a tightly closing jar or another suitable container.
You can store in the refrigerator for up to 1 month after cooking.
