How To Cook Oatmeal Biscuit With Cream Cheese And Fruit - Recipe

Required products :

  • 1 1/2 cups oatmeal
  • 1 cup wholemeal flour
  • 1/2 teaspoon cinnamon powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 2/3 cup brown sugar
  • 1/3 cup coconut oil (olive or other fat)
  • 1/2 teaspoon vanilla extract

for cream:

  • 230 grams of cream cheese at room temperature
  • 1/2 cup yogurt
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

for decoration:

  • 3/4 cup strawberries, cut into pieces
  • 1 kiwi, peeled and cut into pieces
  • 1/4 cup blueberries

Method of preparation :

Preheat oven to 190 degrees. Cover the bottom of a baking tray with parchment paper.

Mix the oatmeal, flour, cinnamon, baking soda, baking powder and salt.

In another bowl, mix the eggs, brown sugar, coconut oil and vanilla extract.

Pour the wet ingredients into the bowl with the dry ones, stir and distribute the mixture in the pan. Bake for about 20 minutes or until golden brown. Cool to room temperature.

Beat the cream cheese, yoghurt, powdered sugar and vanilla with a mixer until smooth. Spread the mixture on the oatmeal and decorate with pieces of strawberries, kiwi and blueberries. Cut into pieces and serve for breakfast or as a light dessert.
