Required products :

70 grams of whole wheat flour

75 grams of oatmeal

60 grams of coconut shavings

100 grams of butter

1 tablespoon honey

1 equal teaspoon of baking soda

50 grams of sugar

1 tablespoon lemon juice

2 - 4 tablespoons warm water

 

Method of preparation :

Preheat oven to 200 degrees.

Melt the butter and mix it with the honey.

In a separate bowl, mix the dry products: sugar, oatmeal, flour and coconut shavings.

Quench the soda in the lemon juice and add to the honey-oil combination.

Combine the two mixtures and mix until smooth, adding a few tablespoons of water. The exact amount depends on the quality of the flour and oatmeal, the goal is to get a moist dough. It does not look like the usual way of making cookies, but becomes crumbly.

Line the bottom of the pan with parchment paper. Form cakes, scooping out the dough with a spoon (with one for ice cream is perfect) and arrange in the bowl, leaving some space between them.

Bake in the oven until golden (about 10 minutes) and allow the finished cookies to cool before serving.

 

In the same way you could make almond cakes, you just need to replace the coconut shavings with almond leaves and use an essence with the same aroma.
