Use good quality aubergines, they should not be overripe and have injuries on the skin. Wash them, cut (as you see fit) and dry, then fry over high heat in oil (high temperature allows to preserve not only the taste of vegetables, but also its structure). Add salt to taste during the heat treatment, and as a substitute for salt you can use a little soy sauce (of course, this will change the taste of the salad, giving it an Asian accent).
Cut the old onions into semicircles, fry them in the same fat in which you cooked the aubergines, adding oil if necessary. Fry until transparent, and to enhance the taste of vegetables you can add a teaspoon of sugar and a little ground black pepper.
Cut the parmesan into thin slices with a suitable knife, or grate it if you do not have one.
Once all the ingredients are ready, it's time to combine them.
In a suitable bowl pour the beans drained of the liquid, add the fried onions and eggplant, stir. Sprinkle with green onions and arrange on a plate the dish that can be served as a main course or salad.
Serve with slices of parmesan.
