Required products :

  • 100 grams of flour
  • 1 egg
  • 30 milliliters of water
  • 1/2 cup pitted green olives
  • 1/2 cup pitted black olives
  • 1/2 head old onion, finely chopped
  • 1 clove garlic, finely chopped
  • 5 sliced ​​dried tomatoes
  • 5 grams of dried oregano
  • 5 grams of dried thyme
  • salt and pepper to taste
  • olive oil or frying oil

for the sauce:

  • 2 cloves garlic, pressed
  • 1 teaspoon mustard
  • 1 tablespoon lemon juice
  • 2 teaspoons olive oil
  • 200 grams of strained yogurt
  • salt and pepper to taste

Method of preparation:

Put the flour in a bowl and add the chopped olives, onion, garlic, tomatoes, oregano and thyme. Add the egg, water and season with salt and pepper to taste. Stir until a homogeneous sticky mixture is obtained and heat the fat for frying.

Using a spoon, scoop out the olive mixture and fry the bites on both sides. Arrange them on a plate covered with a kitchen roll to drain off excess fat. Prepare the sauce by mixing the milk with the mustard in a bowl and stirring until mixed.

Add garlic, lemon juice, olive oil, salt and pepper to taste. Stir until smooth and cool for half an hour. Serve the olive bites garnished with the aromatic sauce and enjoy their taste.
