Required products :
1 almost full cup of black olives Pitted kalimata
1/2 teaspoon pitted green olives
1/2 teaspoon pitted black olives
1 head garlic
2 shallots
1 1/2 teaspoons olive oil
1 teaspoon lemon juice
1 tbsp grated parmesan
Method of preparation :
Peel an onion, cut off the top of the garlic so that the cloves can "open".
Coat the onion and garlic with olive oil, add salt and wrap the heads in foil. Bake them in a preheated 200 degree oven for about 40 minutes.
When the garlic has cooled, peel it and put the cloves in a blender bowl. Add onion, black olives and beat until smooth.
Then add the remaining olives, parmesan, freshly squeezed lemon juice, olive oil and do not stop beating until you get a delicate texture.
Season the finished pate with salt and ground black pepper to taste and you can serve on a slice of bread.
