Required products :

  • 3 large leek stalks / white and light green part /, finely chopped
  • 2 tablespoons olive oil
  • 1 1/2 teaspoon ham, diced
  • 8 large eggs
  • 1 tablespoon fresh milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 100 grams of shredded cheese

Method of preparation :

  • Preheat oven to 180 degrees.
  • Heat 1 tablespoon olive oil in a pan over medium heat.
  • Add the leeks and simmer for 4-5 minutes until soft. Transfer to a bowl.
  • Add the ham to the same pan, stir and stew for about 1-2 minutes, stirring occasionally. Remove from the heat.
  • Beat the eggs with the milk in a large bowl.
  • Sprinkle with 1/2 teaspoon salt and 1/8 teaspoon freshly ground black pepper and stir.
  • Add the stewed leeks, ham and grated cheese. Stir to distribute evenly.
  • Grease a small pan with the remaining olive oil and pour the mixture.
  • Bake for 15-20 minutes or until eggs are ready.
  • Cut the omelette and serve.
