How To Cook Omelet With Artichokes And Roasted Peppers - Recipe

Omelet with artichokes and roasted peppers, served with lettuce, flavored with balsamic dressing and toasted baguette for a full lunch.

Required products :

  • 5 eggs, separated egg whites from yolks
  • 2 whole eggs
  • 1/2 can of artichoke hearts
  • 1 roasted pepper, cut into cubes
  • 50 grams of grated Parmesan cheese
  • 10 grams of fresh basil leaves, chopped
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • salt and pepper to taste

Method of preparation :

Mix the separated yolks with the two whole eggs with a wire spoon.

Beat the egg whites separately with a mixer until stiff foam. Pour the egg whites into the yolks and mix gently to keep the mixture light and fluffy. Add the artichoke, pepper, half the parmesan cheese and basil. Season with salt and pepper to taste.

Place the oven rack on the top row and heat to a high temperature.

Melt the butter in a pan with olive oil, pour and distribute the egg mixture evenly. Cook until browned, about 5 minutes, then sprinkle with remaining parmesan and bake in preheated oven for 2-3 minutes.

Serve the artichoke omelette with lettuce with balsamic dressing and toasted baguette if desired.
