Necessary products:

3 eggs

1/2 eggplant

3 tomatoes

1/2 head onion

3 mushrooms

1/4 pepper (sweet)

4 tablespoons milk

basil, salt, oil - to taste

Method of preparation:

Cut the mushrooms into thin slices and fry until golden. Then add to them onions, cut into thin semicircles and fry until transparent. Add the remaining vegetables, stirring often. Fry until the aubergines are ready. Season with salt and pepper.

Mix the eggs with the milk, add a little salt and pepper and beat with a wire whisk. Bake in a ribbed pan under a lid.

Take out the omelet and put it with the ribbed side down. Arrange the vegetables and mushrooms on half of the omelette, add the fresh basil leaves and close the other half of the omelette.
