How To Cook Omelet With Smoked Cod In Milk Sauce And Parmesan - Recipe

Required products :

  • 6 large eggs
  • 200 grams of smoked cod
  • 450 milliliters of fresh milk
  • 80 grams of butter
  • 3 tablespoons flour
  • 50 grams of parmesan (grated)
  • 4-5 sprigs of parsley
  • salt and freshly ground white pepper to taste

 

Method of preparation :

Turn on the oven to preheat the grill at 200 degrees, placing the grill on top (above average).

Finely chop the parsley.

Put the fish in a saucepan, pour the cold milk and put the dish on low heat. Once the liquid boils, let the fever cook for 5 minutes and remove to a plate. Cut into pieces.

Pour the milk into another bowl and melt half of the butter in a saucepan. When the latter starts to simmer, pour the flour into it and fry it until golden. Then gradually start pouring the milk, stirring so that no lumps form.

Cook the sauce until thickened (about 5 minutes), stirring constantly.

When you remove it from the heat, add the fish, parsley and sprinkle with salt and ground white pepper.

Beat the eggs with the same spices and pour them into a fireproof pan (26-28 cm in diameter) in which you have previously melted the remaining butter. Cook over medium heat, lifting the edges of the omelette until the eggs are firm, and the surface should remain moist.

Remove the pan from the heat and place the fish and parsley on the egg base. Sprinkle with parmesan and place the dish in the oven so that the latter can melt.

Serve the delicacy immediately.
