Required products :

  • 2 eggs
  • 1 clove garlic (or to taste)
  • salt to taste
  • oil
  • 1 teaspoon grated ginger
  • 1 teaspoon brown sugar
  • 1 teaspoon soy sauce
  • 1 teaspoon rice vinegar
  • 6 - 7 cherry tomatoes
  • parsley

 

Method of preparation :

Beat the eggs with the salt. Pour them into a hot pan, bake an omelet (1 minute on each side is enough) and remove to a plate.

Grate the garlic and ginger (or chop very finely) and fry them in hot oil in the pan in which you baked the omelette. After about 3 minutes, add the sugar and shortly afterwards the chopped tomatoes. Let everything cook for about a minute, the tomatoes should soften. Finally add the soy sauce and rice vinegar. Incredible aroma !!! Stir and pour the mixture over the omelet. Sprinkle with chopped parsley and serve.
