Required products :

  • 1 tablespoon pine nuts or chopped almonds
  • 6 onions, peeled and cut lengthwise
  • 2 teaspoons oil
  • 1/4 teaspoon balsamic vinegar
  • 1 teaspoon sugar
  • 3 tablespoons butter
  • 1 packet of puff pastry, thawed (400 grams)
  • 240 grams of mushroom mix (mushrooms, shiitake, etc.)
  • 1 crushed clove of garlic
  • 100 grams of ricotta
  • 1 cup arugula
  • a few slices of parmesan (made with a peeler)
  • olive oil and lemon slices for serving

Method of preparation :

Preheat the oven to 200 degrees and bake the nuts in a pan until browned - about 4 minutes. Transfer them to a small plate.

Put onions in the pan in which you baked the nuts and pour the fat. Season with salt and pepper. Bake for 20-25 minutes until browned. Allow to cool and remove the burnt top layers of onion.

Meanwhile, bring the balsamic vinegar to a boil in a small saucepan until it thickens and syrups - for about 5 minutes. Add 1 tablespoon of oil and remove from the heat. Arrange the onion in this sauce with the cut side up, trying to arrange the slices as close to each other as possible, if necessary you can overlap some.

Roll out the dough on a floured surface and cut a circle slightly wider than the diameter of the pan. Pierce it with a fork and place it on the onion in the pan, pushing the edges into the edge. Bake for 25-30 minutes.

Heat the remaining 2 tablespoons of oil in a pan and fry the mushrooms and garlic until cooked through - about 5-8 minutes. Season with salt and pepper.

Allow the tart to cool for 5-10 minutes, then carefully turn it over on a tray. Sprinkle with ricotta, arugula, parmesan, mushrooms and nuts.

Drizzle with olive oil and serve with a few slices of lemon.
