Necessary products
For the dough:
1 1/4 teaspoon flour
1/4 teaspoon salt
100 grams of cold butter
1/4 tea cup yogurt
2 teaspoons lemon juice
1/4 teaspoon ice cold water
1 egg white with a little water to spread
For the stuffing:
4 - 5 medium potatoes
1/2 red onion
1/2 cup grated Parmesan cheese
2 tablespoons butter
a few sprigs of thyme
parsley or other green spice for decoration
Method of preparation :
Mix the flour with the salt in a bowl, add the butter, cut into cubes and grind by hand to get crumbs the size of a pea.
In a separate bowl, mix the yogurt with the lemon juice and ice-cold water. Add to the flour with the butter and knead again with your hands. Do not knead for long. Wrap the dough in plastic wrap and refrigerate for an hour.
Cut the potatoes into circles without peeling them and put them in a saucepan with cold water. Put on the stove and let it boil for 5 minutes on medium heat, then drain the liquid.
Arrange the potato rings on a board or in a large plate and allow to dry.
When you take the dough out of the fridge, put it on a plate sprinkled with flour and roll out a layer with a diameter of 25 - 28 centimeters. Using a rolling pin, transfer it to a suitable tray, the bottom of which you have covered with baking paper.
Put the parmesan in the middle of the dough, leaving it un sprinkled for about 5-6 centimeters on all sides.
Arrange the potato rings on the cheese, from which you have previously soaked up the excess moisture with a paper towel.
Spread the softened butter on the surface and roll the edges of the dough to make an open square. Brush the edges with whipped egg whites and sprinkle the pie with a little coarse salt.
Arrange the thyme and onion stalks on top.
Preheat the oven to 180 degrees and bake the pie for 30 - 40 minutes until it acquires a beautiful golden color.
Sprinkle the finished delicacy with chopped parsley or another favorite green spice.
