Required products :

  • 4 oranges
  • 100 grams of brown sugar
  • 400 grams of white sugar
  • 6 eggs
  • 2 teaspoons ground almonds (almond flour)
  • 1 1/2 teaspoons baking powder
  • 250 grams of mascarpone with 2 tablespoons of cream

Method of preparation :

Put two of the oranges in a saucepan and pour cold water over them. Then cook for 2 hours, if necessary, add a little water. Drain, save the liquid and allow the fruit to cool, then cut and clean the seeds.

Turn on the oven to preheat to 180 degrees and line a round 25 cm tray with baking paper.

Put the brown and 200 grams of white sugar in a food processor, add the eggs and combine. Followed by boiled oranges and blending until smooth. Add the almond flour and baking powder.

Pour the dough into the prepared pan and flatten. Bake for 1 hour, until dry.

Meanwhile, add water to the remaining liquid in the pan to get 3 tea cups. Add the juice of 1 orange and the remaining 200 grams of sugar. Boil the syrup until the crystals melt.

Thinly slice the second orange, add to the syrup and cook for 10 minutes.

Pour the sweet liquid over the cooled cake, cut and serve with orange and mascarpone.
