How To Cook Orange Cake With Ganache Cream And Walnuts - Recipe

Required products :

 

For swamps:

  • 4 large eggs
  • 175 grams of sugar
  • 50 grams of starch
  • 150 grams of flour

 

For irrigation:

  • 1 teaspoon strong tea
  • 150 milliliters of cream with a fat content of 20%
  • 100 grams of sugar

 

For the orange cream:

  • 150 milliliters of orange juice
  • 2 tablespoons grated orange peel
  • 1/2 orange
  • 3 egg yolks
  • 2 tablespoons flour
  • 4 tablespoons sugar
  • 1 teaspoon salt

 

For ganache cream:

  • 300 milliliters of cream with a fat content of 20%
  • 1 dark chocolate
  • 1 tablespoon flour
  • 70 grams of butter

Method of preparation :

Beat the eggs in a thick-walled saucepan, add the sugar and place on the hob. Heat them to 40-45 degrees, remove from the heat and beat for about 15 minutes. The elastic consistency is an indicator of readiness.

Sift the flour and starch, add to the eggs and mix thoroughly from the bottom up. Pour the mixture into a form greased with oil and sprinkled with flour. Place in a preheated oven for about 30 minutes, during which time you should not open the door under any circumstances.

When the marshmallow is ready, take it out of the mold and leave to cool.

Make the orange cream. In a suitable bowl, mix the orange juice and peel, sugar, salt, egg yolks and sifted flour. Bring the combination to a boil, stirring constantly. After 2 minutes, the cream should thicken. Remove from the heat and add the orange pieces.

 

You should make strong tea and whip the cream with the sugar.

 

Assemble the cake. Cut the marshmallows in half to make two flat pieces. Drink one with tea, spread with orange cream, spread the cream. Place the other tray on top, soak it with the tea as well, piercing it with a toothpick beforehand.

Leave the cake for the moment and start making cream ganache.

Heat a suitable dish, pour the cream into it, heat it enough, but do not let it boil. Add the chocolate, pour in the flour and stir until the cream starts to thicken. Then add the butter and remove the pan from the heat.

Cover the surface and sides of the cake with the resulting cream, wait 30 minutes, spread once more and refrigerate for a quarter of an hour. When removed, apply another layer of cream and sprinkle the cake with crushed walnuts. Return to the refrigerator and after 2 hours you can eat with pleasure.
