How To Cook Orange Cupcakes From Barley Flour With Cinnamon And Walnuts - Recipe

Required products :

1 teaspoon barley flour
3/4 teaspoon wholemeal flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon grated nutmeg
3/4 teaspoon ground cinnamon
1/4 teaspoon oregano
2 eggs
1 teaspoon yogurt
3 tablespoons sugar or a suitable substitute for the
peel and juice of 1 orange
1 tablespoon vegetable fat
1 teaspoon vanilla extract (or vanilla sugar)

To sprinkle:
2 tablespoons chopped walnuts
1 teaspoon sugar or sweetener
pinch ground cinnamon

Method of preparation :

In a deep bowl, mix the two types of flour, baking powder, baking soda, salt, nutmeg, cinnamon and chopped walnuts.

 

Using a mixer, beat the eggs with the milk, add the sugar, orange peel and juice, 1 tablespoon of oil and a teaspoon of vanilla extract. Beat at low speed.

 

Then add the dry mixture and the dough is ready.

  

Preheat oven to 200 degrees.
Divide the mixture into muffin tins and sprinkle with a mixture of walnuts, sugar and cinnamon, which you have prepared for this purpose.

 

Bake the cupcakes for 15-20 minutes and remove to cool on a wire rack.

 

You can serve with peanut butter.

An option is to replace barley flour with oatmeal or buckwheat flour.
